This beverage is inspired by the “dessert” juices you get when you buy a juice cleanse or visit a fresh pressed juice place. You can totally play with this and use different nuts. I like cashews because they are creamy and blend easily after soaking. Inspired by a recipe from nibsandgreens.com
Warming Cashew “Milk”
1 cup raw cashews
7 cups water, divided
A generous 1/4 teaspoon of cinnamon, freshly grated nutmeg and cardamom
1/2 teaspoons of vanilla bean powder (I bought this at Williams Sonoma) or 1/2 vanilla bean *you can use a 1/4 – 1/2 teaspoon of vanilla extract as a last resort
1/8 teaspoon ground cloves
Soak 1 cup of cashews in 2 cups of water for about 24 hours. In a separate vessel, soak the the dates in 1 cup of water.
The following day, drain the cashews and dates and add to a blender. Add the spices along with 4 cups to the blender. If using the vanilla bean, cut into 4 pieces and throw in whole. Blend on high until the milk is smooth. You may need to strain through cheesecloth to obtain a very smooth result.
Drink straight up, with rum, in your coffee or tea. Cheers!
