It’s the season for all things pumpkin! Here’s my favorite waffle recipe, made even more yummy with pumpkin and pumpkin pie spice. They can also be made as pancakes, if you’d rather or don’t have a waffle iron.

Pumpkin Pie Waffles with Molasses Butter

For the waffles:

1 1/2 cups of all purpose (sub gluten free, flour if you like)
2 teaspoons baking powder
1 teaspoon kosher salt
2 tablespoons brown sugar
2 teaspoons pumpkin pie spice
1 cup buttermilk (you can use regular milk)
1 cup seltzer water
2 eggs, lightly beaten
1 teaspoon vanilla
1/4 cup melted butter or canola oil
1/2 cup canned pumpkin

Preheat your waffle iron.

Sift together dry ingredients. Mix together wet ingredients. Mix both together. I like to let my batter sit for a few minutes to allow the flour to properly absorb the liquids. It will thicken up a bit.

Pour about 2/3 cups batter onto your waffle iron. Bake until crispy and golden.

Molasses butter:

One stick of unsalted butter, softened to room temperature
2 tablespoons molasses, preferably Grade A

Whip butter with molasses with a hand blend until combined. Return to fridge to firm up before serving. Put it on your waffle!!!
